I want to unlock a new Elite Soul, I can choose between:

Gawain
Roland
Cassiopeia

Which one would be best, considering a later Legendary unlock ?

In general, the Souls you want to unlock are:
Gawain, Cass, Mordred, Dartagnan/Joan. Probably in that order. After that, get whatever you feel like.
