I think I figured it out. I don't know, but I seem to really miss these big blue buttons uptop. I need to get Van Helsing to max 20 as well.

Ha, yeah. They don't make it super easy to sort out, especially with the constant loading.
Basically, if you click "List of Locked Souls" at the top you can go over to the "Legendary" tab and pick out which one you're going to start planning toward. When you click on that one, you can see in the bottom-right where it says "You Own/Req Points/Soul Req. 1/ Soul Req. 1", and those last two will show you which two Elite souls you need to level to unlock them. Then you go to the Elite tab and do the same to see which two Standard souls you need to level up to unlock those.
Are Yinglong and Sephiroth worth getting if you may benefit from their effects or are you better of waiting for something else? Perhaps better to buy the SR weapons?
I didnt know that you could obtain Eidolion defeating the Raids. I am happy.
Sadly the exchange eidolons are not all that great. Apparently there are only 4 copies of them in the exchange shop, meaning you can't fully max them out as you're stuck on 3/4 break limit. Not sure if that's a bug, intended or if you can find them as drops (no confirmations yet).
Regardless, I mentioned this a while back several pages ago. The exchange eidolons are very weak for being SR, only slightly better than some R eidolons at max in which they have more HP and better battle skills, but because you can't get them maxed in the first place, their stats are even lower, which doesn't help how low they're to begin with. The amount of exp you would need to burn on enhancing them is not worth the gain compared to leveling some R units to a lower level for higher attack.
You can still use them if you really want too though, at least having buffs on their battle skills provides some kind of use or their 30% element buff as a main. I'm using Sephiroth as a sub unit myself but I found out all this the hardway, doing it myself, and honestly regret leveling her as high as I did.
Alright, I will probably go for R eidolons for now then, thanks for the info :) Btw, I noticed SR enhancement Eidolons got 15% hp and atk as base effect, but low hp and ATK stats, won't they actually be better to use as main if you don't have anything better than an R?
