Does her AW Ability stack with Diinas and the likes?

It is counted as a separate avoidance attempt as far as i know. So if you have two of them, it'll check one first and then the other if the first fails to nullify the damage.

chloe is being a bitch already. Started at max stamina , even had a level up today. She just dropped once

She looks really nice. Im going to try get get as many as i can, but if i already have Sophie should i waste time leveling her?

There is no real advantage taking her over Sophie unless you for some unique map really need 2 angels. Do mind that she and many others may get the 3rd affection quest later on which requires awakening her, but that is probably 2 years away. If you need to prioritize, go for Sophie and use Chloe copies to level her skill and then keep a Chloe copy for collection purposes.
