Third, can someone briefly explain how Union events work? Aparently the next event is one of those and until now I only experienced raid events. I entered the first Union that scout me, so I could complete the daily quests to donate. The Union only has 3 members. Does it hinder my ability to "complete" the event?

Can't answer the first one for you but I wouldn't be too reliant on it.

Light teams are doing fine, especially if you have Sol. Hopefully you at least got St Nicholas and the SSR sword from the event. As for himes for your current set up, aim for SR Belebog or SSR Raphael for an atk down debuff. If you're having trouble clearing rank 2 accessory quests, that's most likely because of your lack of stats from weapon and eidolons, seeing as how you only started 3 weeks ago. As long as you keep playing, work on getting weapons and eidolons, you should improve over time.

For union events, you will most likely not be completing the event in that union. I recommend you start searching for a new union because you will not be able to leave your union once the event starts. Though it may be hard to be accepted into a strong union if you don't meet their standards, at least look for one with active and multiple players. Union events are score based, similar to raid event PP, and clear based. 4 different set of rewards, one for your PP gain, one for the entire union's PP gain, one for union's total expert clears and one for union's total ultimate clears. It's a team effort and with only 3 people, you will definitely won't be able to complete all the objectives.
